This coffee comes from Jose Giraldo of Cafe 1959 who is a third generation coffee farmer who specializes in innovative processes. This particular lot is a Pink Bourbon variety that comes from Finca El Diamante who partnered with Cafe 1959. The resulting product is very clean with some bright but balanced acidity and a sweet cake-like finish.
The process of getting the coffee from Finca El Diamante in Huila to Cafe 1959 in Quindio involved a night time truck trip where the first stage of this three stage fermentation/ double washed process begins. Traveling at night helps keep the temperature stable, the cherries were put into grainpro bags and rode 13 hours to Cafe 1959's processing facility.
Upon arrival in Quindio, the cherries complete the initial 24-hour fermentation. Then they are pulped and transferred into closed tanks for an additional 24 hours of anaerobic fermentation. Following this step, the coffee undergoes washing and rinsing before being placed in a dry closed tank for another 24-hour fermentation period. It is then washed and rinsed once more, followed by drying on raised beds. While on the raised beds the coffee undergoes a prolonged, slow drying phase lasting approximately 40 days under shade.
