We've picked this coffee because it presents a wild mixture of fruit and savory. On the first sip, the acidity blasts off and gradually unveils umami, all while retaining a subtle amount of sweetness. There is a reason we chose it as our first release. We favor both ends of the processing spectrum, clean and/or funky. Some processes tend to be more one-dimensional, whereas we feel the Koji process creates complexity. Koji spores are sprinkled on whole ripe coffee cherries to help the fermentation; this not only enhances the coffee's sweetness but also adds a distinctive body and structure while unlocking that rich umami flavor you taste on the back end of the cup. The coffee itself, which is a Gesha varietal, was harvested by Elias and Shady Bayter of El Vergel Estate. We hope you enjoy the savory fruit of their labor as much as we do!
